As Jim suggests, your student might want to contact the Caravan Farm
company. They've done several shows involving live animals over the
years, and I'm sure could provide a wealth of information and insight on
working with animals in theatre performance.

I'm also bracing myself for the novel experience of working with a live
snake and live pig for a production I'm directing (Leanna Brodie's
Schoolhouse). And yes, there's more to it than one might at first think.
I'm working with a student who has a strong background training and
working with animals in performance situations, and I'm learning that a
great deal goes into getting the animals comfortable with the stresses
of performing, and carrying out whatever routines you need them to do
(or not do, as the case may be).

It's not Ontario, and it's in the past, but several years ago Caravan
Farm Theatre in rural BC did a show called The Blue Horse, which
featured not only a (coloured) blue horse but also a lead actor who
imitated (quite well!) the horse. Check the company's website for
pictures.

There is the royal winter agricultural Fair in toronto late
october--not theatre per se, but performance--horse jumping,
clydesdale
teams, dog shows etc in a context of audience/community observance of
ritualistic performance.
